your sail sounds great! this is just what I had made for my boat. its only crazy armchair sailors who started the idea you should cut down a rig or undercanvas a boat for offshore sailing- power that B up and get sailing
My last westtsail 32, Happy Times, i had the mainsail raoch probably 3" past the backstay and the foot roached well below the boom, gained nearly 25% area over the battenless original mainsail, adn a boat that pointed and went faster right down to very light conditions indeed.
ive also never noticed weather helm issues on any of the 4 boats including my current K32 so i'd say pile on the sails, and dont cut your boom! you can always reef if you get weather helm
